Course Overview
The WSQ Certificate in Food Services (Culinary Arts) helps learners build capabilities in essential traditional culinary skills for a strong foundation to take on a variety of general job functions in Food Services at entry level. In addition to technical competencies, the course includes transferable soft skills which will help learners stay competitive and job-ready.
There is also option for fresh entrants in the Food Services sector to upgrade themselves in higher qualifications when their jobs call for higher level of responsibilities or when they seek further career aspirations.
Upon completion of the course, the learner will be able to:
- Follow food safety and hygiene procedures and policies, maintain the cleanliness and upkeep of premises
- Demonstrate understanding of the tools and equipment, ingredients and techniques involved in the cooking of Western cold dishes
- Prepare ingredients and components of Western dry heat dishes with different types of flavouring techniques and equipment
- Receive, check, prepare, pack and deliver stocks with proper documentation
- Follow guidelines to provide positive customer service to a diverse range of customers
- Manage orders from customers and serve meals according to service standard operating procedures of the organisation
Programme Outline
- Customer Service Excellence-1
Students will be able to explain how delivering exceptional customer service contributes to long-term organisational success, including its impact on customer satisfaction and loyalty, new customer acquisition, sales growth, profitability, and competitive advantage.
- Western Cold Dish Preparation-1
Students will explore the tools, equipment, ingredients, and techniques used in Western cold dishes and dry heat dishes. They will also gain hands-on experience in stock management, covering tasks such as receiving, checking, preparing, packing, and delivering items, with an emphasis on accurate documentation.
- Western Dry-Heat Dish Preparation and Cooking-1
This module teaches students seafood fabrication and preparation techniques using moist and dry heat methods. They will gain skills in handling seafood for various culinary applications and creating flavourful Western dishes, providing a solid understanding of seafood preparation and cooking methods.
- Food and Beverage Service-2
This module provides students with a foundational understanding of food and beverage operations and their significance in the hospitality industry. They will explore the food and beverage landscape in Singapore and its effects on hospitality. Key regulatory requirements and their implications will also be discussed. Additionally, students will develop various technical and soft skills essential for creating a positive dining experience for guests.
- Food Safety and Hygiene-1
This module aims to equip students with the knowledge and skills needed to implement food safety and hygiene procedures when handling and preparing food. Students will also learn how to maintain cleanliness and uphold premises according to regulatory standards.
- Food and Beverage Inventory Management-1
This module equips students with the skills and knowledge for kitchen operations, focusing on tools, equipment, ingredients, and techniques for Western cold and dry heat dishes. They will also gain practical experience in stock management, including receiving, checking, preparing, packing, and delivering, with an emphasis on proper documentation.

- Interview may apply for applicants who do not meet equivalent academic qualifications or expected duration in workplace experience.
- International applicant must have a valid work pass through the entire course.

Students who have successfully completed the programme will be awarded a
Certificate in Food Services (Culinary Arts) by SkillsFuture Singapore.
