Fruit Art – Creative Fruit and Vegetable Carvings For All Occasions

Overview

These workshops aim to equip participants with the skills to prepare fruits as decorative pieces in food presentation. The range of skills includes basic carvings of small fruits to complex assembly of fruits of all sizes to eye-catching centre-pieces for banquets and restaurants displays.

Who should attend?

This series of workshops is designed for the beginner or anyone with an interest in the art of fruit carving, to create centerpieces for events and functions.

Participants may enroll at any level based on their prior experience in fruit carving, interested individuals who do not have any experience in fruit carving are encouraged to begin with Level 1 of the course which is specially tailored for novices.

Workshop Format

Our workshop takes a hands-on approach. All fruits for the classes will be provided. 

Duration

Level 1 – Beginner (3 hours)

Level 2 – Intermediate (5 hours)

Level 3 – Advanced (7 hours)

Entry Requirements

  • Level 1 – No pre-requisite
  • Level 2 – Completion of Level 1
  • Level 3 – Completion of Level 2

Certification

Participants must achieve a minimum attendance of 75% to receive a Certificate of Participation awarded by SHATEC.

Workshop Outline

Level 1 – Beginner (3 hours)

After completing the workshop, participants will be able to:

  • Handle various fruit carving knives
  • Prepare fruits for carving
  • Learn techniques to carve small fruits and vegetables such as apples, oranges, cucumbers, and carrots into leaves, petals and flowers
  • Create small fruit displays

Level 2 – Intermediate (5 hours)

After completing the workshop, participants will be able to:

  • Prepare fruits for carving
  • Learn techniques to carve large fruits and vegetables such as honeydews, watermelons, papayas and turnips
  • Learn techniques to carve complex flower designs
  • Create fruit displays using a combination of small and large fruits

Level 3 – Advanced (7 hours)

After completing the workshop, participants will be able to:

  • Learn how to carve vessels from large fruits
  • Learn how to create one (1) masterpiece for banquet table display and one (1) masterpiece for restaurant display
  • Incorporate learning insights from Level 1 and 2 to create unique centrepieces under the guidance of the instructor

Veteran in the Art of Vegetables and Fruits Carving
Chef Priyanut is a veteran in the art of vegetable and fruit carving. She hails from Thailand, well-known for its spectacular fruit and vegetable carving displays in restaurants and hotel functions. Chef Priyanut has a keen interest in fruit and vegetable carving and at the beginning of her career; she had the opportunity to pick up the skills from a Thai Master.

Chef Priyanut retired from her job as the Chef-De-Partie at Mandarin Oriental Singapore in 2010, a job she held for 10 years. Since then, Chef Priyanut has been training professionals from the food and beverage industry and hobbyists in Singapore for 7 years in the art of vegetable and fruit carving. Chef Priyanut is proud of her forte and is constantly looking out for opportunities to share her love for fruit and vegetable carving with all enthusiasts, both professionals and hobbyists.
